Why this list is longer than three

A credit freeze at the three nationwide bureaus stops most new-account fraud, and it is free by federal law. It does not cover everything. Utility and telecom accounts are checked against NCTUE; new bank accounts are checked against ChexSystems; tax returns and Social Security are separate systems again. Each of those has its own freeze or lock, and each is missed by almost everyone who freezes only the big three.

A freeze blocks new credit being opened in your name. It does not stop fraud on accounts you already have, and it does not remove your data from anywhere.
